Solution 1. IoT System Installation to provide Comprehensive Regular Maintenance Alerts

In this case, ANKO's client utilized the HLT-700XL Multipurpose Filling And Forming Machine to produce shrimp dumplings 3 days a week, running each production for 6 hours. Issues such as uneven molding and deformity of the finished products were frequent. Upon communication with ANKO, a determination was made that the problem stemmed from the prolonged use of molds without regular maintenance. The Teflon coating had outlived its useful cycle, causing sticking and instability during production. ANKO made a service call to the client's factory, replacing the old molds with ones solving the issue. The client was informed about the detriments of Teflon peeling and the importance of regularly scheduled maintenance.

When ANKO delivers machines to customers, a comprehensive user manual detailing maintenance schedules and steps is provided. Moreover, IoT (Internet of Things) technology has been implemented into the machine, which uses vibration sensors to monitor core component usage. When maintenance is required, alerts are automatically displayed, allowing clients to schedule inspections, make advanced preparations, and develop a routine of regular machine maintenance. This proactive approach extends the machine's lifespan and enhances production through efficient operations.

After achieving efficient Har Gow production, ANKO proceeded to assist a client in developing a new gluten-free Har Gow using natural ingredients. During the initial production phase, one side of the Har Gow wrapper turned out thinner and broke easily. ANKO's engineers attempted various parameter setting adjustments, but this was not the cause of the issue. ANKO’s HLT-700XL Multipurpose Filling And Forming Machine is equipped with an innovative dough system. It is developed to process various types of dough efficiently. After placing the dough into the hopper, the machine utilizes an Auxiliary Screw to push the dough downwards. The design of the blades in the Dough Screw has enough space to allow different types of dough. The dough enters a unique mechanism to be shaped into a Dough Pipe and extruded. This prevents the dough from spinning inside the machine. This dough system has been tested and is suitable for processing most wheat flour dough, starchy dough, and gluten-free dough to make a wide variety of stuffed pastries, dumplings, and more.

Wrappers-Wheat starch/Tapioca starch/Salt/Lard/Water, Filling-Shrimp/Water chestnuts/Bamboo shoots/Ginger/Spring onions/Tapioca starch/Cooking oil/Sesame oil/Salt/Sugar/White pepper

Preparing Shrimp Filling

(1) Peel and chop shrimp into small pieces, then place in a container (2) Add chopped vegetables and seasoning to the shrimp, mix well and place it in the fridge

Making Wrappers

(1) Add wheat starch, tapioca starch, salt, and lard in a mixing bowl, then pour in hot boiling water (2) Use chopsticks to mix, let cool, then knead into a smooth dough (3) Divide the dough into 12 even pieces, flatten them into thin, round wrappers

Assembly

(1) Remove the shrimp filling from the refrigerator, place a spoonful in the center of the wrapper (2) Fold the wrappers to form a crescent shape, and form pleats to seal the Har Gow (Shrimp Dumpling). Repeat until all the dumplings are formed. (3) Place Har Gow onto a steamer, then steam over medium heat for 6 minutes
